Sauce:

· 2 tablespoons avocado oil

· 2 3-inch piece lemongrass, chopped

· 5 cloves of garlic, minced

· 1 2-inch piece ginger, peeled and chopped

· 2 kaffir lime leaves

· 1 large bunch fresh cilantro

· 2 tablespoons sake

· 1 ½ cup chicken broth

· 1 ½ cups canned coconut milk

· ½ cup roasted peanuts

· 5 tablespoons natural peanut butter

· 2 tablespoons fish sauce

· 4 tablespoons lime juice

· 2 tablespoons sambal olek chile paste

· Noodles: (spaghetti, ramen or zucchini noodles)


Fish:

· ½ cup panko breadcrumbs

· ¼ macadamia nuts

· ½ cup unsweetened coconut

· ¼ cup rice flour

· 2 egg whites

· 6 4-ounce ahi tuna steaks (salt and pepper on both sides)


Fruit Salsa:

· 1 mango, diced

· 1 dragon fruit, diced

· 2 tablespoons chopped cilantro

· ¼ cup diced red onion

· 1 jalapeño, minced

· Juice and zest of each: 1 lime and 1 lemon


1. Make the Sauce: Heat oil in a large saucepan over medium heat and add lemongrass, garlic, ginger, lime leaf and cilantro stems. Cook for a couple of minutes. Add sake and cook until alcohol has evaporated, about 30 seconds. Add broth, coconut milk, peanuts, peanut butter and fish sauce and simmer for 15-20 minutes more.


2. Turn off the heat and add lime juice and sambal chile paste. Puree in blender until smooth and keep warm until ready to serve.


3. Make Fruit Salsa: In a bowl combine all salsa ingredients and season to taste.


4. Prepare the fish: Combine panko, macadamias and coconut in a shallow dish. In a separate dish beat the egg and in a third dish place the rice flour. Dredge the fish through the flour, then the egg and lastly through the macadamia mixture pressing gently to adhere.


5. Cook in a bit of oil for 3-4 minutes on each side for medium rare. Slice and serve with peanut sauce and fruit salsa.


6. While fish is cooking, cook noodles to package instructions and pour a bit of sauce over them before serving. If using zucchini noodles, drizzle fresh noodles with sauce before serving.
